A Traditional Maldivian Coconut Cake
Ingredients:
2 cups fresh grated coconut
¾–1 cup sugar or hakuru
½ cup flour
3 eggs
½ tsp cardamom powder
2 tbsp melted butter (optional)
1 tsp vanilla extract (optional)
Pinch of salt
Method:
Preheat the oven to 180°C and lightly grease a baking tray. Whisk the eggs and sugar until smooth and slightly pale. Fold in the grated coconut, followed by theflour, cardamom, and salt, mixing into a thick batter. Stir in melted butter and vanilla if using.Pour into the tray and spread evenly. Bake until the top turns golden and the edges develop a light crispness, while the centre remains set yet moist. Allow it to cool before slicing.

Ingredients for the pancakes:
1 cup flour
2 eggs
1½ cups milk or water
1 tbsp sugar
Pinch of salt
Ingredients for the filling:
1½cups grated coconut
¾cup sugar or hakuru
¼cup water½tsp cardamom powder
1 tsp butter (optional)
Method:
Whisk together flour, eggs, milk, sugar, and salt into a smooth, thin batter. Let it restbriefly, then cook into soft, delicate pancakes, keeping them light in colour andtender.For the filling, heat sugar or hakuru with water until it forms a caramel syrup. Addgrated coconut and cook until thick and sticky. Finish with cardamom and butter.Place the filling onto each pancake and fold into rolls or neat parcels.
